Autumn Soup



As soon as the chilly air comes in I'm ready for a bowl of really good soup! This recipe is my favorite Fall time soup! It is absolutely DELICIOUS! We're having this for dinner tonight with grilled cheese sandwiches. Mmmm... But, I think it would also be wonderful served with a pretty green salad and some crunchy bread. My husband's wonderful Aunt Kay gave me this beautiful soup tureen. I just love it! Here is the recipe below if you want to try some really delicious and cozy soup! Even your little ones will love it! :)



Autumn Soup

1 lb. ground beef

1 to 2 Tbsp. fat

1 c. chopped onion

4 c. hot water

1 c. carrots, cut up

1 c. celery, cut up

1 c. potatoes, cut up

2 tsp. salt

1/2 tsp. pepper

1 to 2 beef bouillon cubes

Pinch of basil

6 whole tomatoes or 1 large can

Brown beef in hot fat in a heavy kettle or Dutch oven. Add onions and cook 5 minutes more. Add water, carrots, celery, potatoes, and seasonings. Mix thoroughly. Bring to a boil, cover and simmer 20 minutes. Add the tomatoes; cover and simmer until ready to eat.
